Holtrop's in Honduras: More than we can imagine...

God's blessings go beyond our imagination. His love is beyond our comprehension. We praise him in this day for all he has given to us. Although we miss our families so much, and especially on this holiday, God has blessed us with such wonderful friends to spend Thanksgiving with. Liz and I began working at 9:30. It was too late. We should've started at 7:30. You live, you learn. It was our first Thanksgiving preparations, and although we ate two hours later than planned, everything turned out great! I just have to say that I'm really proud of our meal. We made a great turkey-that-wasn't-dry, stuffing, mashed potatoes, sweet potato casserole, corn, gravy, pumpkin pie, and apple cobbler, and apple cider. We did BUY rolls...Anyway, it was complete with the guys watching football, but taking over at just the right time: to carve the turkey. Tim was impressed with Luke's carving skills and Luke would accredit the great-tasting turkey to the carving. What a blessing to have such a wonderful meal! We got to share some plates with the guards at school. We were wondering if they looked at the food and thought, "What is this slop they just gave us?" Hope they liked it... We're planning to go horse back riding tomorrow and staying over night at the bed and breakfast. What a great weekend to relax and reflect on God's providence. Here are some pics.
